Cheesy Beef Tacos with Pico de Gallo
15 mins prepServes 2
A delicious and cheesy beef taco recipe featuring seasoned ground beef, shredded cheese, flour tortillas, and a fresh homemade pico de gallo. Easy to make for one or double for a crowd.
First, prepare your pico de gallo. Chop 1 tomato, 1 jalapeño (removing seeds), 1/4 of an onion, and 2 tbsp of cilantro. Mix these ingredients together with the juice from one lime and season with sea salt to taste. For the beef, cook the ground beef chuck in a skillet and drain any excess fat. Return the beef to the skillet and add 1 pack of Taco Bell Taco Seasoning along with 3/4 cup of water. Cook as directed on the seasoning pack until the liquid is absorbed and beef is fully seasoned. To assemble the cheesy tacos, add some grape seed oil to a hot skillet. Lay down your small flour tortillas and sprinkle with some shredded Fiesta Blend cheese. Add a spoonful of the seasoned ground beef, a scoop of the fresh pico de gallo, and more cheese. Close the tortilla (folding it in half) and cook on both sides until golden brown and the cheese is melted and crispy. Enjoy!
