Delicious crispy U.S. Farm-Raised Catfish strips seasoned and fried, served in warm flour tortillas with homemade Comeback Sauce, shredded lettuce, and sharp cheddar cheese.
1. Cut 3 U.S. Farm-Raised Catfish into strips.
2. In a bowl, season the catfish strips with 2 tbsp mustard, 1 tbsp hot sauce, 1/2 tsp Creole seasoning, 1 tsp Onion Powder, 1 tsp Garlic Powder, 1 tsp Smoked Paprika, 1/2 tsp white Pepper, and 1 egg. Mix well to coat.
3. Prepare the breading: In a separate bowl, combine 1 cup Yellow Cornmeal, 1/2 cup All Purpose Flour, 4 tsp Creole Seasoning, 1 tsp Onion Powder, 1 tsp Garlic Powder, 1 tsp Smoked Paprika, and 1 tsp white Pepper.
4. Toss the seasoned U.S. Farm-Raised Catfish strips in the breading mixture, ensuring they are fully coated. Place the breaded catfish on a wire rack or plate for 10 minutes to allow the breading to set.
5. Heat oil to 330 degrees Fahrenheit in a deep fryer or heavy pot. Fry the breaded catfish strips until golden brown and cooked through.
6. While the catfish is frying, prepare the Comeback Sauce: In a bowl, combine 1 cup mayo, 2.5 tbsp ketchup, 1.5 tbsp honey, 1.5 tsp Worcestershire sauce, 1 tsp black pepper, 1 tbsp hot sauce, and 2 tsp Creole seasoning. Mix well.
7. To assemble the Crispy Catfish Wraps, take a warm flour tortilla. Spread a generous amount of Comeback Sauce, then add shredded lettuce, shredded sharp cheddar, and a piece or two of the Fried U.S. Farm-Raised Catfish.
8. Fold the bottom of the tortilla up, then close the right and left sides over the filling, securing with a toothpick if desired. Serve immediately.
